1. Burning rice of Ninh Binh
 
 
 
The first specialty is the burning rice which is one of Ninh Binh's most famous specialties. Known as a specialty dish that has long been a trademark of Hoa Lu land. The goats here are bred naturally in the limestone hills so the quality is always in the top. Goat meat can be processed into a lot of dishes such as goat meat roll, steamed goat and grilled goat, but the most delicious and attractive is underdone goat dish. Experiencing many careful steps from processing, marinating spices, processing to produce a delicious underdone goat dish. Over the years and fluctuations of time, sour spring rolls have become a specialty dish, the food of culinary culture which is indispensable in the holidays and festivals in Yen Mac.  Spring roll is made from lean buttock meat that removed fat, boiled pig skin, powdered grilled rice and some spices such as monosodium glutamate, salt, etc then wrapped with guava leaves to create a characteristic aroma and banana leaves to create a beautiful shell. When eating, the spring roll is sour and spicy, it is often served with fig leaves or guava with lemon and chili garlic sauce. This is a rustic dish, characterized by the love of Yen Mac people.
 
 
4. Eel vermicelli of Ninh Binh
 
 
 
"Coming to Ninh Binh, you must eat eel vermicelli" Although not as famous as goat meat, burning rice, etc but Ninh Binh eel vermicelli is also considered a specialty that you definitely have to try when coming to this land. To get good eel vermicelli, the most difficult thing is how to choose high quality eel. The selected eel is a small eel but the meat is very fragrant and firm. The special of Ninh Binh eel vermicelli is that it is served with banana flower, so the taste is soft but not getting fishy by eel. 5. Tube wine of Nho Quan
 
 
Tube wine of Nho Quan is a specialty of Muong people which crystallizes mountain and forest flavor. This is a type of wine that does not go through a fire distillation. People use glutinous rice (cracked rice) to cook rice mixing with yeast, putting it into the bowl or crockery jar from 3 months or more to drink. Tube wine symbolizes for the spirit of community solidarity, so when drinking, people do not pour out the cup but use the pipe for drinking wine making from hollow small bamboo to attract from the large jar.
